Scrambled Eggs with Spinach

Ideal for breakfast or lunch. Rich in protein and good fats to keep you full throughout the day. Works well with either hens or duck eggs.



The great thing about spinach is that you can add lots in when cooking and it melts down to combine nicely with eggs. Eggs and spinach combine extremely well and work well with salmon and avocado.



– 3 eggs, beaten
– Handful of baby spinach
– 1 tsp. butter
– 2 Tbsp. cream
– Salt and pepper


  1. In a small bowl, whisk eggs, cream, salt and pepper.
  2.  In a small non-stick pan, melt butter over medium-high heat, add in spinach and stir every 30 seconds for 2 minutes.
  3. Add eggs, and cook by stirring slowly just until eggs are thickened and no liquid egg remains.
