This nutty granola is a great alternative to fruit and oat based granola you would typically have on exercise days. It is energy dense and very tasty so aim for a moderate portion.

 

This nutty granola is perfect for anyone looking for a low carbohydrate breakfast. The toasted nuts and seeds with cinnamon and vanilla essence provide wonderful flavour and taste.

 

Ingredients

– 75 g chopped mixed nuts
– 40 g jumbo porridge oats
– 2 Tbsp. buckwheat
– 1 Tbsp. pumpkin seeds
– 1 Tbsp. sunflower seeds
– 2 tsp. desiccated coconut
– 2 tsp. shelled hemp
– 2 tsp. coconut oil
– 2 tsp. vanilla essence
– 1 tsp. cinnamon

Preparation

1. Mix all dry ingredients in a bowl.
2. Melt the coconut oil over a low heat, mix in vanilla essence and mix into the dry mix.
3. Spread the mix flat on a baking tray and bake for 15 minutes in an oven pre-heated to 160°C.
4. Makes two portions.
