Bircher muesli is a delicious high carbohydrate breakfast option that combines oats, fresh apple juice, nuts and seeds for a dessert like taste and mouthful texture. Made in advance usually the night before, this is a great on the go breakfast.

 

Bircher muesli is a delicious high carbohydrate breakfast option that combines oats, fresh apple juice, nuts and seeds for a dessert like taste and mouthful texture.The name “Bircher” came from Maximilian Oskar Bircher-Benner who was from Switzerland. He promoted muesli, a dish based on raw oats, fruits, and nuts for its nutritional value, we certainly agree! It tastes as good as a dessert which is not a bad thing!

Ingredients

– 200 g jumbo porridge oats
– 200 mL apple juice, fresh
– 200 g plain natural yoghurt, whole
– 100 mL milk, whole
– 30 g desiccated coconut
– 20 g chopped mixed nuts
– 20 g ground almonds
– 15 g poppy seeds
– 15 g honey
– Juice of 1 lemon

Preparation

1. Mix all ingredients a large bowl, cover in clingfilm and leave in the fridge overnight.
2. Makes three portions, and keeps for five days.
